Corned Beef & Sweet Potato Hash
As an established fan of both all things autumnal and all things breakfast, one of my favorite meals to whip up as these nights grow dark early is Sweet Potato and Corned Beef Hash. Simply roast diced sweet potatoes and then combine in a well-oiled skillet with cubed leftover corned beef -- and sauteed sliced onion, if you like -- and let the ingredients brown and slightly caramelize to your preferred degree of crispness before topping them with a fried egg. Paired with an Autumn Maple Belgian Style brown ale, I could comfortably enjoy this meal all fall – and winter – long!
