Roasted Pumpkin and Frisée Salad
Roasted squash of any kind is one of my main go-to seasonal dishes, and I love the heartiness it helps give this otherwise light salad. Diced pumpkin drizzled with maple syrup and roasted is wonderful when cubed and added to a frisée salad with toasted sweet & spicy pumpkin seeds, pickled shallots, crispy pancetta, pecorino cheese, and homemade vinaigrette dressing (I replaced half of the olive oil in the vinaigrette with pumpkin seed oil for added autumnal festivity)!
