Sugar Muffin Sleigh Bells

I’ve posted variations of Sugar Muffins (my family’s name for the "French Puffs" from my mom’s 1980's copy of Betty Crocker's Cook Book) on several occasions, but I couldn’t help featuring them once again. When freshly baked, I find these muffins to be the perfect breakfast treat for a special occasion – and Christmas is most definitely one of those times. Having baked these in a new muffin tin, I thought the muffins especially resembled the sleigh bells Jack Skellington uses to teach the zombie band “Jingle Bells” in The Nightmare Before Christmas, and I’ll look forward to indulging in these muffins on Christmas morning!

Sugar Muffins

1 egg
¾ cup milk
½ cup vegetable oil*
2 cups all-purpose flour
⅓ cup sugar
3 tsp baking powder
1 tsp salt

Coating:
½ cup margarine or butter*
½ cup sugar
1 tsp ground cinnamon

*I opt for sweet butter for both the oil in the muffins and margarine in the coating.  

Heat oven to 400°. Grease bottoms of muffin tray. Beat egg; stir in milk and oil. Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy). Fill each cup of muffin tray about ¾ full. Bake until golden brown, about 20 minutes. Remove from pan.

Immediately roll hot muffins in about ½ cup sweet butter, melted, then in mixture of ½ cup sugar and 1 tsp ground cinnamon.
