Proof Bakery

I'm truly a sucker for the perfect pastry.  Glendale-native Na Young Ma's Proof Bakery in Atwater Village makes a beautiful assortment of croissants (both sweet and savory), cakes, scones, cookies, and various other sweets that I consider to be just that -- perfect. From her post-college job baking bread at night at Amy's Bread in New York, to attending the Culinary Institute of America's pastry program, to working at restaurants the likes of Rustic Canyon and Craft, Ma's love for baking is apparent in every flaky, buttery bite of her wares, still warm from the shop's industrial-sized oven.  Despite the bakery's lengthy line -- which is typically out the door shortly after opening daily at 8:00 AM -- ultimately snagging a petite portion of Earl Grey Panna Cotta, a strong cappuccino, and a breakfast cake or financier is the surefire way to put me in a good mood every morning (though I'm usually too sated from more than one breakfast pastry to have room to enjoy their delectable sandwich fare)!
