Great Grandmother's Old-Fashioned Chocolate Sauce
My great grandmother was a fabulous home cook and taught as a young woman in a small one-room prairie schoolhouse in Nebraska -- teaching the entire age range, from kindergarten age through high school. Her recipe for chocolate sauce is beyond compare in my book, and a great way to celebrate a holiday weekend (and the unofficial start of summer!).
My Great Grandmother's Old-Fashioned Chocolate Sauce
3 T. unsalted butter, cut into small pieces
3/4 c. whipping cream
1 c. sugar
1 c. Karo syrup
1/4 t. salt
1/2 c. unsweetened sifted cocoa
1 t. vanilla
2 t. instant espresso powder (optional)
Place butter and cream in heavy one-quart saucepan over medium heat. Stir occasionally until butter melts and mixture comes to low boil. Add sugar, corn syrup, salt and cocoa and stir until dissolved. Continue to cook over medium heat for 3-5 minutes. Remove from heat and add vanilla.
NB: I often add 2 t. instant espresso powder to deepen the flavor.
