Rosaliné

I've long been a fan of Chef Ricardo Zarate's Peruvian cuisine (his restaurant Picca was a go-to celebratory spot for me), and I've been eagerly awaiting the opening of Rosaliné, his new restaurant in the former location of Comme Ça on Melrose. Named for his mother, as always, Zarate's classic Peruvian dishes demonstrate a modern California edge, and I could easily make a daily meal out of the Corazon Anticucho (beef heart skewers) and halibut ceviche with crispy baby calamari.

Corazon Anticucho - beef heart skewers, rustic rocoto pepper, feta cheese, walnut sauce

Ceviche Crocante - halibut, crispy baby calamari, yuzu kosho marinated, aji amarillo leche de tigre

Chicharron de Paiche - popped kiwicha, fried amazonian paiche, yuzu aioli sauce

Chaufa Paella - peruvian fried rice paella-style, pancetta, la chang sausage, bagoong, prawns

Chanchay Con Leche - Peruvian cake with goat's milk, manjar blanco, coconut milk, maracuya, guava frozen yogurt, torched meringue, and berries.
