Lemon Sugar Cookie Christmas Trees
One of my very favorite Christmas recipes is a delicate lemony sugar cookie my family has affectionately called "Tree Cut-Outs," which has been passed down in my family since its original use by my Swedish great grandmother. My grandmother and mother both perfected this recipe, and I have always enjoyed these wafer-thin treats during the holidays. Though my trees never roll out quite as magically thin, it's still a cookie that evokes many wonderful Christmas memories for me. My own take on these cut-outs involves utilizing this juniper berry glaze, and I thought I would change up our family's traditional decoration this year (for at least part of this batch!) to make the cookies mimic the one Jack Skellington uses in The Nightmare Before Christmas to demonstrate which door Lock, Shock, and Barrel should go through to retrieve "Sandy Claws" after mistakenly retrieving the Easter Bunny! The recipe for these heavenly cut-outs is as follows:
3 c. sifted all-purpose flour
2 t. baking powder
1/2 t. salt
3/4 c. butter
3/4 c. sugar
1 egg
1/2 c. sour cream
1/2 t. vanilla
1/2 t. lemon extract
Sift together all dry ingredients into one bowl. In another bowl cream butter and sugar until light and fluffy; add egg and mix well; stir in sour cream, vanilla and lemon extracts. Chill dough before rolling out 1/16" thick; use cookie cutters to cut shapes and place on baking sheets. Place in a preheated 350 degree oven for approximately 10 minutes until lightly browned around the edges.
