Christmas Cookies Galore!
I’m sure it’s clear by now from my Instagram feed this month that my family and I always go a little bit crazy -- in the best kind of way -- when it comes to baking Christmas cookies! One of my favorites is a simple Snowflake Sugar Cookie, which I make with the following go-to recipe. Its basic ingredients (which I always have on hand!) and easy to manage consistency make rolling out and cutting shapes a breeze, and the finished result is a delicious, sugary, buttery flavored treat!
1 c. butter, softened
3/4 c. granulated sugar
1 egg
2 1/2 c. all-purpose flour
Beat butter on medium speed in electric mixer for 30 seconds; add sugar and beat until fluffy; add egg and beat until well combined. On low speed gradually beat in flour just until mixed through. Chill dough in refrigerator at least two hours. Roll between parchment paper to 1/8" thickness and cut into desired shapes. Bake on cookie sheets for about 10 minutes until lightly browned around edges.
I use a thin butter cream frosting to glaze the cool cookies and immediately apply a mix of coconut flakes, glitter and white nonpareils to create the magical (and delicious) snowflakes!
