Chris Cosentino's Grilled Peach Summer Salad
I wholeheartedly rooted for Chris Cosentino when he competed on (and won!) Season 4 of "Top Chef Masters," and have come to adore his cookbook Beginnings as a lovely staple for seasonal cooking. Broken up into Fall, Winter, Spring, and Summer, I'm already enjoying plating up the beautifully simple Italian dishes in the book's latter section. A go-to for me on warm summer day is his Grilled Peaches, Gongonzola, and Dandelion Green salad. Warm grilled peaches and red onion slices pair so wonderfully with the sweetly bitter greens (for this particular salad, I substituted peppery arugala) and rich cheese, and such easy prep leaves you ample time to enjoy another glass of wine while enjoying the warm cotton-candy sunset sky. If you want to add some slices of any of Cosentino's Boccalone salumi, I certainly wouldn't hold you back!
