Peach & Berry Crostata
I love keeping my favorite homemade pie dough in the freezer, ready in discs to roll out and use on a whim (though, word to the wise - Trader Joe's frozen pie crust is pretty hard to beat in a pinch!). Putting a crostata together is so easy with its free-form shape, it can nearly be done blind-folded, and this Good Housekeeping recipe (along with my love of Peach Melba and anything almond) served as my inspiration for creating this latest Peach & Berry Crostata. With the addition of a pint of raspberries to accompany the peach slices, I used a simple streusel topping to finish off the dessert:
1/2 c. all purpose flour
1/2 c. sugar
4 T. cold butter, well blended to form "clumps"
My signature twist is blending 6 oz. of crumbled almond paste with this buttery topping, which is then strewn over the fruit portion of the crostata to bake. The almond paste turns a gorgeous caramelized color, and infuses the fruit-based dish with an additionally sweet complexity that I just can't turn down!
