I’ve long been a fan of Belcampo Meat Co.’s wonderfully humane approach to the art of butchering – raised with tremendous care on a rotating diet of grasses, grains, and legumes on the company’s own farm near Mount Shasta, and processed at the company’s own facility (featuring Temple Grandin-friendly pens), the organic meat yielded by Belcampo’s efforts is superlative to say the least. Head butcher Alex Jermasek’s extensive experience with Californian culinary heavyweights like Ink, Short Order, ChiSPACCA, and the former Lindy & Grundy honed his talent and skilled hand, ensuring Belcampo lives by its promise to “bring you the best meat.” Having enjoyed visiting their stall in the past at Grand Central Market, I was thrilled when their flagship Southern Californian butcher shop and restaurant went in relatively down the road from my office in Santa Monica, making it easy to pick up a glorious cut of meat (or even a pre-packed Ready Meal!). Additionally, the restaurant next door features a menu relying solely on Belcampo’s beautiful meats (they’re occasionally even included in cocktails, like the BBQ Old Fashioned), which are prepared in uniquely delicious ways that highlight their marvelous quality, and the expert care that truly goes into crafting these perfect plates from farm to table.
