Munsters Heart-Shaped Red Velvet Bites
The eternally sweet Herman and Lily Munster are obviously another one of my very favorite spooky couples of all time, and I thought some petite Red Velvet bites, baked in a Wilton mini heart-shaped dessert shell pan and then topped with chocolate ganache and a perfectly plump raspberry would be the ideal tribute to honor their delightfully off-beat love!
Mini Red Velvet Heart Cupcakes
1-1/4 c. all-purpose flour
1 c. granulated sugar
1/2 T. unsweetened cocoa powder
1/2 t. salt
1/2 t. baking soda
1 egg, beaten
3/4 c. canola oil
1/2 c. low-fat buttermilk
1 T. red food coloring
1 t. vanilla
1 t. distilled white vinegar
Preheat oven to 350 degrees and apply nonstick cooking spray to mold indentations (or alternately spray mini muffin tins and/or use paper liners).
In medium bowl, whisk together first five dry ingredients to blend. In second larger bowl, beat egg and incorporate remaining wet ingredients. Add dry ingredients to wet and mix until blended. Fill each mold indentation 3/4 full with batter. (As this recipe makes more than I needed for my one Wilton mold pan, I had enough remaining batter to pour into a small bundt pan to separately bake and drizzle with a thin cream cheese icing.)
Bake until minis spring back when touched, approximately 12 mins. After five minutes on cooling rack flip out and then reposition upright. When completely cooled, fill each with a teaspoon of ganache and place a glazed raspberry to decorate on top.
