Mini Angel Food Coconut Cat Cake

I figured I'd stay on a roll of baking yet another curious and creative recipe from Christine McConnell’s cookbook Deceptive Desserts: A Lady’s Guide to Baking Bad, this time opting to recreate her Angel Food Coconut Cat Cake. I whittled my cake down into a miniature, personal-sized dessert, and decked it out per Ms. McConnell's instructions with coconut-flavored frosting, shaved coconut (dyed pink!), and modeling chocolate features. I was pleased to find that my cat's eyes matched my Mosser Glass Jadeite Glass Cake Stand, which provided the perfect means of displaying my nearly-too-cute-to-eat treat!
