I was so very excited to head to Dave Beran’s tasting menu restaurant Dialogue in Santa Monica this past weekend – and walking into a seemingly run of the mill food court on Third Street Promenade and through an otherwise unassuming door upstairs revealed this petite, 18-seat Westside gem. Familiar with Chef Beran’s experience at Chicago restaurants Alinea and Next, this solo endeavor boasts what I felt to be a truly beautiful, seasonal menu featuring over twenty courses that currently celebrated the transition from summer to fall, and then through winter. Each plate was, of course, a veritable art installation (one was even aptly titled "an oil painting for uni"), each seeming to celebrate perfect morsels of focal proteins like lobster, trout, and duck. With wine pairings and the pre-paid ticket totaling at least a wee bit more than an average night out, the meal was absolutely one to savor as a beautifully executed journey through Beran’s culinary, artistic mind.
