Forbidden Rice with Roasted Butternut Squash and Scallops
I love recipes that feel like they come together effortlessly. Roasted butternut squash is, of course, one of my staples for fall cooking, and a quick and easy meal can be made by pairing the roasted cubes with cooked black rice, drizzled with blood orange olive oil, and topped with perfectly seared scallops. A nice, cold Heretic IPA rounds the meal off with deliciously hoppy autumnal flavor!
